Sweet Potato Pie Recipe

We had sweet potato pie on Christmas Day! It has been so long since either of us had this, so we thought we would cook one for Christmas! It was my first time, and it came out delicious! I thought I would share the recipe.

Sweet Potato Pie:

Ingredients:

1 lb. sweet potatoes
1/2 cup of butter, softened
1 cup white sugar
1/2 cup of milk
2 eggs
1/2 tsp of ground nutmeg
1/2 tsp of ground cinnamon
1 tsp of vanilla extract
1 (9 inch) unbaked pie crust

Directions:

1. Boil sweet potato whole in skin for 40-50 minutes, or until done. Run cold water over the sweet potato and remove the skin.

2. Break apart the sweet potato in a bowl. Add butter, and mix well with a mixer. Stir in the sugar, milk, eggs, nutmeg, cinnamon, and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust.

3. Bake at 350 degrees for 55-60 minutes, or until a knife (or toothpick) can be inserted in the center and comes out clean.

*The pie will puff up, and then will sink down as it cools.



I thought it was a success since it was my first time making one! I enjoyed the process and did not realize it was so easy to do! So many people use can filling, but this is just as easy!
